Fran Ellsworth's Fresh Apple Cake with Frosting

Pre heat oven to 350 degrees
baking time 40-45 minutes
2   8" cake pans
Ingredients:
2 cups Flour
1 tsp Salt
1 tsp Cinnamon
3/4 tsp Soda
1/2 Baking Powder
2 cups Finely chopped Apples
1/2 cup of vegetable oil or apple sauce (I use olive oil)
1/2 cup Milk
2 tsp Vanilla (pure Vanilla is best)
2 Eggs beaten until frothy
1 1/3 cups brown sugar
3/4 cup walnuts

Mix together the dry ingredients.  Add next four ingredients and mix well.  Fold into the batter the frothy beaten eggs.  Add the sugar and walnuts and mix well
Pour into baking pans, and bake for the allotted time.

Cream Cheese Frosting for Fresh Apple Cake

Ingredients
1/2 Cup Butter (I always use butter not margarine)
1 1/2 tsp Vanilla
4 1/2 C Powdered Sugar
1/4 C Milk

Cream butter  and vanilla.
Add powdered sugar alternating with the milk
Beat until light and fluffy.
Frost the cake.

This cake I made for  the first time when the Hero and I were visiting with a some close friends Dave and Pat Thatcher.  Pat, a nurse, was working 3pm - 11pm shift at the hospital.  I made supper to lighten her load.  The fragrance of the cake cooking, and the melt in your mouth taste was a hit with all of the family.
Pat, Dave and the Hero are gone now.   I miss them all.

Peanut Butter Cookies











Mattie (Matilda Roberts) Whitson
375 degrees
Bake time: 10 min.
Ingredients:
1 C butter
1 C granulated sugar
1 C brown sugar
1 tsp vanilla
2 eggs beaten
1 C peanut butter
3 C Flour
2 tsp soda
Cream butter, sugars, vanilla
Add eggs beat well
Stir in Peanut Butter
Sift dry ingredients together, stir into PB mix.
Roll into balls and put on cookie sheet. .
When taking out of the oven drop the cookie sheet this flattens.
I took this recipe with me when I went off to college.

Cooked Peaches












Lillian Sherman
6 small whole ripe peaches
(do not peel or remove the pit)
6 C sugar
1/3 C water
Pour Sugar over the peaches, pour water over the sugar.  Simmer 3-4 hours.  (Pit will give and almond like flavor)

Uples Honey Cookies
2 tsp Soda
1 Tablespoon Hot Water
1 Cup Brown Sugar
1 Cup Butter
1 Cup Honey
1 egg
1 tsp
1 tsp Cinnamon
½ tsp Salt
4 cups Flour
On the back:
Mix well an drop on cookie sheet (makes 24)

Cook at 300 degrees for 10 min.

Boiled Spice Raisin Cake
Ingredients:
Wet mix:
1 cup water
1 cup molasses
2 cups brown sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon allspice
1/4 teaspoon ground cloves
2 cups raisins
1 cup butter or margarine
1 tsp pure Vanilla
Dry mix:
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Instructions:
Preheat oven to 350 degrees F.
In a medium saucepan, mix water, molasses, brown sugar, raisins, butter, and the spices. Bring to a boil and let simmer for 5 minutes. Remove from heat and let cool.

In a separate bowl, mix, flour, baking powder, baking soda, salt
Add the wet ingredients to the dry ingredients and stir until well mixed.

Pour into a 13x9 inch glass dish or cake pan that you have greased and floured.

Bake for 35 minutes or until a toothpick comes out clean from the center of the cake.
You can frost or not. Makes a great breakfast cake (high in iron).
